Ingredients
- 1 to 2 lb. cooked pork roast or pieces, diced
- 1 (8 oz.) can stewed tomatoes, cut up
- 5 to 7 peeled, diced green chiles
- 1/2 small onion, diced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 can chicken broth (optional) with 1 c. water
- 2 c. water
Method
- Save the juice the pork was cooked in or use canned chicken broth with water.
- Skim off fat from pork juice.
- Add water.
- In a deep pot, return pork juice and pork to boil.
- Add tomatoes, onion, chile and spices.
- Simmer for 1 hour.
