Ingredients

  • 2 & 1/2 cups cooked brown rice
  • 2/3 cup of cooked rice
  • 1/2 or small red capsicum (pepper)- chopped
  • Chopped spring onions
  • 1/2 or small tin of corn
  • 2/3 cup of currants
  • 150 - 200g cashew nuts
  • 6 slices chopped ham or bacon
  • Dressing:
  • 1/4 Cup Sunflower oil
  • 2 Tablespoons fresh lemon juice
  • 4 Tablespoons of light soya sauce
  • Mix all ingredients together

Method

  • Place all ingredients into a salad bowl with rice.
  • Stir in dressing and SERVE!!
  • DELICIOUS!!
