- 2 & 1/2 cups cooked brown rice
- 2/3 cup of cooked rice
- 1/2 or small red capsicum (pepper)- chopped
- Chopped spring onions
- 1/2 or small tin of corn
- 2/3 cup of currants
- 150 - 200g cashew nuts
- 6 slices chopped ham or bacon
- Dressing:
- 1/4 Cup Sunflower oil
- 2 Tablespoons fresh lemon juice
- 4 Tablespoons of light soya sauce
- Mix all ingredients together
Method
- Place all ingredients into a salad bowl with rice.
- Stir in dressing and SERVE!!
- DELICIOUS!!
