Ingredients

  • 2 c. cooked sweet potatoes (about 3 potatoes)
  • 3 eggs
  • 1 c. sugar
  • 2 Tbsp. applesauce
  • 3/4 c. evaporated skim milk
  • 1 1/2 Tbsp. rum flavoring
  • pumpkin pie seasoning

Method

  • Preheat oven to 450°.
  • Prepare unbaked pie shell.
  • Separate eggs (save yolks).
  • Beat egg whites until stiff (set aside). Blend potatoes, milk, sugar, applesauce, rum flavoring and at least 1 egg yolk (all 3 if you'd like) until smooth; fold in egg whites.
  • Pour 1/2 mixture into pie shell.
  • Sprinkle generously spices over mixture.
  • Pour remainder of mixture into shell. Sprinkle generously spices over top.
  • Bake at 450° for 15 minutes. Reduce to 350° and bake for 30 minutes.
  • Remove when toothpick comes out clean.
