Ingredients

  • 2 c. coconut, shredded
  • 1 c. oleo
  • 1/2 c. sugar
  • 2 c. flour
  • 2 small pkg. or 1 large pkg. vanilla instant pudding
  • 3 c. milk
  • 1 (9 oz.) Cool Whip

Method

  • Combine first 4 ingredients.
  • Spread on cookie sheet.
  • Bake at 325° or 350° for 45 minutes, stirring every 15 minutes.
  • When browned nicely, taken out of oven.
  • Let cool.
  • Take 2/3 of this and put in 9 x 13-inch dish or pan.
  • Mix pudding with milk until thick. Pur over coconut mixture.
  • Top with Cool Whip.
  • Add reserved mixture on top.
  • Refrigerate.
