Ingredients
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 4 shallots, finely chopped
- ½ red capsicum, chopped
- 3 cups cold cooked pasta bows
- 12 pitted olives
- 220 g can or half 430 g can Sanitarium Nutolene, diced
Dressing
- 2 tablespoons lemon juice
- 1½ tablespoons light olive oil
- ¾ teaspoon salt
- ½ teaspoon sugar
Method
1. Steam broccoli florets until just tender (or microwave on HIGH [100%] for 2 minutes). Cool.
2. Combine the vegetables, pasta, olives and Nutolene in a large bowl.
3. Combine Dressing ingredients; mix well.
4. Pour dressing over salad and toss well.
