Ingredients

  • 1 1/2 c. boiling water
  • 1 c. raw quick cooking oatmeal
  • 1 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/2 c. margarine
  • 1 c. white sugar
  • 1 c. brown sugar (packed)
  • 2 eggs

Method

  • In a small pan, bring water to a boil. Take off heat and add oatmeal.
  • Let stand and cool.
  • Mix together flour, cinnamon, nutmeg, salt and soda.
  • Set aside.
  • Cream together margarine and white and brown sugar.
  • Add eggs and mix well.
  • Add flour and oatmeal.
  • Mix well.
  • Pour into greased 9 x 9 x 2-inch baking pan. Bake at 350° for 50 minutes or until cake springs back when lightly touched.
