Ingredients

  • 3 (1 oz.) slices white bread, torn into small pieces
  • 1/4 c. skim milk
  • 1 1/4 lb. lean ground beef
  • 2 large eggs, lightly beaten
  • 1/4 c. ketchup
  • 1/4 c. finely chopped onion
  • 2 Tbsp. finely chopped flat-leaf parsley
  • 1 garlic clove, minced
  • 1/2 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/4 tsp. freshly ground black pepper

Method

  • Preheat oven to 350°.
  • In a large bowl, soak bread in milk 5 minutes.
  • Add remaining ingredients; mix gently.
  • Shape into 8 x 5 x 1 1/2-inch loaf.
  • Place on rack in pan.
  • Bake 50 to 60 minutes.
