Ingredients
- 3 1/2 rhubarb, washed and cut thin without peeling
- 2 egg yolks, beaten until frothy
- 1 3/4 c. sugar
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1/8 tsp. nutmeg
- 8 Tbsp. flour
Method
- Mix sugar with rhubarb.
- Mix eggs with sugar and rhubarb.
- Mix all other dry ingredients and add to mixture.
- Turn into 9-inch pastry shell and bake in oven, preheated to 450°, for 10 minutes. Reduce to 350°.
- Continue baking until done.
- Cool and add meringue and brown.
