Ingredients
- 2 c. grated Swiss cheese or Monterey Jack
- 8 to 10 slices bacon, cooked
- 1/2 pt. heavy cream
- 1/2 c. milk
- 4 eggs
- 1/2 tsp. powdered mustard
- 1/8 tsp. pepper
- 1 (9-inch) pie crust (deep dish is best)
Method
- Mix together cream, milk, eggs, mustard and pepper. Meanwhile, cook bacon.
- Break up bacon and put in bottom of pie shell.
- Spread cheese on top of bacon.
- Pour egg mixture over top of cheese.
- Bake at 375° for approximately 45 minutes to an hour. Put knife between center and edge to check if done.
- It should be fairly clean.
- During last 15 minutes, add strips of bacon to top of quiche, if desired.
