Ingredients
- 1 lb oxtail
- 2 tablespoons oxtail seasoning
- 1 onion
- 4 cups water
- 4 beef bouillon cubes
- 1 lb baby carrots
- 1 lb frozen lima beans
Method
- trim excess fat off oxtails.
- cut all with seasoning.
- cover with onion rings (use a mandaline).
- refrigerate overnight.
- add to pressure cooker.
- brown oxtails and onions.
- add water and beef buillion cubes.
- bring to a boil.
- add carrots and lima beans.
- pressure cook for 1.5 hours.
- serve over coconut rice.
