Ingredients

  • 1 c. firmly packed light brown sugar
  • 1/2 c. vegetable shortening
  • 1 c. chunky peanut butter
  • 1 large egg
  • 1 1/2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Method

  • In a bowl, cream together the brown sugar, shortening and peanut butter, beating until the mixture is light and fluffy. Beat in the egg and stir in the flour, baking soda and salt.
  • Form tablespoons of the dough into balls.
  • Transfer balls to baking sheets.
  • Flatten with the tines of a fork, making a crosshatch pattern.
  • Bake in batches in the middle of a preheated 400° oven for 8 to 10 minutes or until golden.
  • Cool on racks.
