Ingredients
- 1 c. firmly packed light brown sugar
- 1/2 c. vegetable shortening
- 1 c. chunky peanut butter
- 1 large egg
- 1 1/2 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Method
- In a bowl, cream together the brown sugar, shortening and peanut butter, beating until the mixture is light and fluffy. Beat in the egg and stir in the flour, baking soda and salt.
- Form tablespoons of the dough into balls.
- Transfer balls to baking sheets.
- Flatten with the tines of a fork, making a crosshatch pattern.
- Bake in batches in the middle of a preheated 400° oven for 8 to 10 minutes or until golden.
- Cool on racks.
