Ingredients
- 2 tablespoons olive oil
- 1 orange bell pepper, deseeded and cut into strips
- 1 red pepper, deseeded and cut into strips
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 14 ounces chopped tomatoes
- 5 ounces mozzarella cheese, cubed
- 12 ounces pasta, cooked and drained, to serve
Method
- Heat the oil in a frying pan.
- Add the peppers and onion.
- Fry for 10-15 mins, until the onion is tender and the peppers are soft.
- Add the garlic and chopped tomatoes.
- Simmer for 10 minutes.
- Stir in the cubed mozzarella and season well with salt and pepper.
- Serve with the hot pasta.
