Ingredients

  • 2 tablespoons olive oil
  • 1 orange bell pepper, deseeded and cut into strips
  • 1 red pepper, deseeded and cut into strips
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 14 ounces chopped tomatoes
  • 5 ounces mozzarella cheese, cubed
  • 12 ounces pasta, cooked and drained, to serve

Method

  • Heat the oil in a frying pan.
  • Add the peppers and onion.
  • Fry for 10-15 mins, until the onion is tender and the peppers are soft.
  • Add the garlic and chopped tomatoes.
  • Simmer for 10 minutes.
  • Stir in the cubed mozzarella and season well with salt and pepper.
  • Serve with the hot pasta.
