Ingredients
- 20 Ritz crackers
- 1 c. chopped pecans
- 1 tsp. baking powder
- 3 egg whites
- 1 c. sugar
- 1 tsp. vanilla
- Cool Whip and pecan pieces for topping
Method
- Crumble the crackers and mix together with pecans and baking powder; set aside.
- Beat the room temperature egg whites until fluffy.
- Add sugar gradually.
- Add vanilla.
- Fold nut and cracker mixture into the egg white mixture and place into a well buttered pie pan.
- Bake at 325° for 30 to 40 minutes.
- Top with Cool Whip and pecan pieces and chill.
