Ingredients

  • 1 envelope unflavored gelatin
  • 1 pkg. lemon Jell-O
  • 1 large can spiced peaches, chopped (reserve the juice)
  • 1 or 2 cans pineapple tidbits (reserve the juice)
  • 1/2 c. stuffed olives, thinly sliced
  • 5 gherkin pieces, thinly sliced
  • 1 c. pecans, chopped

Method

  • Soften gelatin in 1/2 cup cold water.
  • Heat juice from fruit (about 2 cups).
  • Use all the peach juice and what is needed of the pineapple juice.
  • Add gelatin and Jell-O.
  • Stir until dissolved. Cool and add remaining ingredients.
  • Pour into a slightly oiled ring mold or pan, and put back in the refrigerator to congeal.
