Ingredients
- 1 envelope unflavored gelatin
- 1 pkg. lemon Jell-O
- 1 large can spiced peaches, chopped (reserve the juice)
- 1 or 2 cans pineapple tidbits (reserve the juice)
- 1/2 c. stuffed olives, thinly sliced
- 5 gherkin pieces, thinly sliced
- 1 c. pecans, chopped
Method
- Soften gelatin in 1/2 cup cold water.
- Heat juice from fruit (about 2 cups).
- Use all the peach juice and what is needed of the pineapple juice.
- Add gelatin and Jell-O.
- Stir until dissolved. Cool and add remaining ingredients.
- Pour into a slightly oiled ring mold or pan, and put back in the refrigerator to congeal.
