Ingredients
- 1 pound string beans (stem end trimmed)
- 1-2 warm dry chili pepper pods (optional)
- 1 teaspoon chopped garlic for each jar
- 3 1/2 c. water
- 2 1/4 c. vinegar
- 6-7 tbsp. salt
Method
- You need a tall jar so you can leave the string beans whole.
- Wash and trim beans.
- Throw away any beans with blemishes.
- Add in pepper pod and garlic.
- Dissolve salt in water.
- Add in vinegar.
- Fill jars.
- Ready in about 14 days.
- Pack into jars.
- Process for 10-15 min in a boiling water bath or possibly store in the refrigerator till ready to use.
