Ingredients

  • 1 pound string beans (stem end trimmed)
  • 1-2 warm dry chili pepper pods (optional)
  • 1 teaspoon chopped garlic for each jar
  • 3 1/2 c. water
  • 2 1/4 c. vinegar
  • 6-7 tbsp. salt

Method

  • You need a tall jar so you can leave the string beans whole.
  • Wash and trim beans.
  • Throw away any beans with blemishes.
  • Add in pepper pod and garlic.
  • Dissolve salt in water.
  • Add in vinegar.
  • Fill jars.
  • Ready in about 14 days.
  • Pack into jars.
  • Process for 10-15 min in a boiling water bath or possibly store in the refrigerator till ready to use.
