Ingredients

  • 10 to 12 potatoes, boiled and mashed
  • 3/4 lb. Cheddar cheese, grated
  • 2 1/2 sticks butter or margarine
  • 2 onions, finely diced
  • 1 lb. lasagna noodles

Method

  • Combine potatoes and cheese. Beat with mixer until combined. Saute onions in butter until soft, then add 1/3 of the onion mixture to potatoes and cheese. Cook noodles until they're not quite done. Generously butter a 13 x 9-inch pan. Place a layer of noodles, then potatoes, then noodles, etc. ending with noodles. Pour remaining onion sauce on top. Cover with foil; bake at 350° for 30 minutes.
