Ingredients

  • 4 loin chops (1-inch thick)
  • 1 c. unsweetened pineapple juice
  • 2/3 c. dry sherry (water)
  • 2 Tbsp. brown sugar
  • 1/2 tsp. dried rosemary leaves, crushed
  • 1 clove garlic, minced

Method

  • Combine all ingredients, except pork chops; mix well.
  • Place chops in shallow dish.
  • Pour in marinade.
  • Cover and refrigerate overnight, turning occasionally.
  • Remove chops from marinade and grill (or broil) over medium hot coals 5 to 6 minutes per side, turning and basting with marinade.
  • Discard marinade or boil for 2 to 3 minutes to use as sauce.
