Ingredients

  • 1 lb sweet Italian sausage
  • 12 ounces wide egg noodles
  • 2 (14 ounce) jars pizza sauce
  • 16 ounces 2% cheddar cheese, shredded
  • 16 ounces 2% mozzarella cheese, shredded
  • 6 ounces low-fat pepperoni (shred with kitchen shears and reserve some for top of casserole)

Method

  • Preheat oven to 350F.
  • Crumble and cook sausage over medium heat untl done and browned, stirring occasionally.
  • Remove sausage and drain on paper towels
  • Apply cooking spray to a large casserole dish.
  • Layer 1/2 noodles, 1/2 sausage and 1/2 remaining ingredients.
  • Repeat with second layer noodles, sausage and remaining ingredients.
  • Garnish top with pepperoni.
  • Bake 35 to 40 minutes.
  • Refrigerate leftovers.
