Ingredients

  • 6 eggs, well beaten
  • 1 1/4 c. sugar
  • 1/2 lb. margarine, melted
  • 2 Tbsp. vanilla
  • 1 tsp. anise flavor
  • 3 1/2 c. flour
  • 4 tsp. baking powder
  • 1 shot glass Sambuca or Anisette

Method

  • In blender, beat eggs until fluffy.
  • Gradually add sugar to beaten eggs.
  • Mix until smooth.
  • Add melted margarine, vanilla, anise flavor and Sambuca.
  • Mix until well blended. Sift flour and baking powder together in a large bowl.
  • Add egg mixture and beat with hand mixer until smooth.
  • Batter will be sticky.
  • Drop by teaspoonfuls in center of pattern on pizzelle iron.
  • Heat until golden.
  • When cool, sprinkle with confectioners sugar through sifter.
