- 1 lb. Italian sausage or chicken, cut up
- 1 lb. mushrooms
- 2 1/2 c. (32 oz. can) tomatoes
- 1/4 tsp. pepper
- 1 1/2 tsp. salt
- 1 c. cold water
- 2 Tbsp. olive oil
- 1 tsp. salt
- 3 c. water
- 1 c. yellow corn meal
- grated Parmesan cheese (optional)
Method
- Add mushrooms and sausage to skillet; cook slowly, stirring occasionally, until mushrooms and sausage are lightly browned. Slowly stir in tomatoes, salt and pepper.
- Simmer 20 to 30 minutes.
