Ingredients
- 1 lb. boneless pork, cut into 3/4-inch cubes
- 1 Tbsp. hot sauce
- 2 tsp. vegetable oil
- 1 (8 oz.) jar chunky salsa
- 1/3 c. apricot preserves
Method
- Coat pork with hot sauce.
- Heat oil in nonstick skillet over medium heat.
- Add pork and brown.
- Add salsa and preserves to pan; lower heat, cover and simmer for 15 to 20 minutes.
- Serve over rice.
- Serves 4.
