Ingredients
- 1 None large papaya, peeled, halved and sliced, seeds reserved
- 3 tbsp olive oil
- 1 None lemon, zested and juiced
- 6 oz prosciutto or Parma ham
- 3 oz arugula
Method
- For the dressing, crush 2 tbsp of the reserved papaya seeds and place in a small bowl with the oil, lemon zest and lemon juice. Season and whisk until combined.
- Place the ham and sliced papaya in a large dish and drizzle with the dressing. Add the arugula and toss gently. Serve immediately.
