Ingredients

  • 2 None large eggs
  • 2/3 cup milk
  • 1 cup all-purpose flour
  • 2 tbsp vegetable oil
  • 3 tbsp butter
  • 1 cup beef stock
  • 1 tbsp light soy sauce

Method

  • Preheat oven to 425°F.
  • In a medium bowl, whisk eggs, milk and 3/4 cup flour until smooth.
  • Heat oil and butter in a small saucepan over low heat until butter melts. Distribute 1/2 the oil mixture between 2 - 12-cup mini muffin pans. Place pans in oven for 1 min, or until very hot.
  • Working quickly, distribute batter between muffin recesses. Bake for 10 mins, or until puddings rise and brown lightly.
  • Meanwhile, reheat oil mixture in pan. Add remaining flour and cook, stirring, for about 4 mins, or until mixture thickens and bubbles. Gradually add stock and 1/3 cup water, stirring, until gravy boils and thickens. Stir in soy sauce.
  • Serve puddings hot with gravy.
