Ingredients

  • 1 1/4 c. soy flour
  • 2/3 c. nonfat dry milk
  • 2 Tbsp. baking soda
  • 1/2 tsp. salt
  • 1/2 c. chopped pitted dates
  • 1/4 c. chopped walnuts
  • 2 slightly beaten eggs
  • 1 tsp. orange peel, grated
  • 3/4 c. orange juice
  • 2 Tbsp. honey
  • 2 Tbsp. cooking oil

Method

  • Preheat oven to
  • 350°. In
  • mixing
  • bowl,
  • stir the soy flour, nonfat dry milk powder, baking powder and salt together thoroughly.
  • Stir
  • in
  • the chopped dates and chopped walnuts. Combine
  • the eggs, grated orange peel, orange juice, honey and cooking
  • oil.
  • Stir
  • the
  • egg mixture into the dry ingredients just
  • until
  • moistened.
  • Fill
  • greased
  • muffin
  • cups 2/3 full. Bake at 350° until done, about 30 minutes. Makes 12 muffins.
