Ingredients
- 1 (4 serving size) pkg. Jell-O brand vanilla flavor cook and serve pudding and pie filling
- 1 c. light or dark corn syrup
- 3/4 c. evaporated milk
- 1 egg, slightly beaten
- 1 c. chopped pecans
- 1 unbaked pastry shell (9-inch), thawed
- Cool Whip whipped topping (optional)
Method
- Heat oven to 375°.
- Stir pudding mix into corn syrup in medium bowl until well blended.
- Stir in evaporated milk and egg.
- Mix in pecans.
- Pour into pastry shell.
- Bake for about 45 minutes, or until top is firm and just begins to crack.
- Cool at least 3 hours before cutting.
- Garnish with whipped topping.
- Store leftover pie in refrigerator.
