Ingredients

  • 1 (4 serving size) pkg. Jell-O brand vanilla flavor cook and serve pudding and pie filling
  • 1 c. light or dark corn syrup
  • 3/4 c. evaporated milk
  • 1 egg, slightly beaten
  • 1 c. chopped pecans
  • 1 unbaked pastry shell (9-inch), thawed
  • Cool Whip whipped topping (optional)

Method

  • Heat oven to 375°.
  • Stir pudding mix into corn syrup in medium bowl until well blended.
  • Stir in evaporated milk and egg.
  • Mix in pecans.
  • Pour into pastry shell.
  • Bake for about 45 minutes, or until top is firm and just begins to crack.
  • Cool at least 3 hours before cutting.
  • Garnish with whipped topping.
  • Store leftover pie in refrigerator.
