Ingredients

  • 12 cup canned pumpkin
  • 12 cup milk
  • 1 egg
  • 2 cups biscuit mix
  • 14 cup sugar
  • 12 teaspoon ground nutmeg
  • 12 teaspoon ground cinnamon
  • 12 teaspoon ground ginger
  • 1 tablespoon biscuit mix
  • 2 tablespoons sugar
  • 14 teaspoon ground cinnamon
  • 2 teaspoons butter or 2 teaspoons margarine, softened

Method

  • Preheat Oven to 400 degrees F.
  • In a mixing bowl, combine pumpkin, milk and egg with a fork.
  • Combine dry ingredients; add to mixing bowl and stir just until moistened.
  • Spoon into 12 well-greased muffin cups.
  • Combine streusel ingredients; sprinkle over muffins.
  • Bake at 400 degrees F for 15 minutes or until golden brown.
  • Serve warm.
