Ingredients
- 6 thick bacon slices, broiled and drained
- 12 thick slices Swiss or Gruyere cheese
- 4 eggs, beaten
- 1 Tbsp. flour
- nutmeg
- cayenne pepper
- 2 c. light cream
- 1 1/2 Tbsp. butter, melted
- pastry for a 9-inch pie
Method
- Line 9-inch pie plate with pie crust.
- Arrange slices of cheese and bacon in overlapping layers in pie crust.
- Beat eggs with flour, generous grating of nutmeg and cayenne to taste.
- Add cream and melted butter.
- Pour this mixture over bacon and cheese and bake in 350° oven until custard is set and lightly browned, about 40 minutes.
