Ingredients

  • 6 thick bacon slices, broiled and drained
  • 12 thick slices Swiss or Gruyere cheese
  • 4 eggs, beaten
  • 1 Tbsp. flour
  • nutmeg
  • cayenne pepper
  • 2 c. light cream
  • 1 1/2 Tbsp. butter, melted
  • pastry for a 9-inch pie

Method

  • Line 9-inch pie plate with pie crust.
  • Arrange slices of cheese and bacon in overlapping layers in pie crust.
  • Beat eggs with flour, generous grating of nutmeg and cayenne to taste.
  • Add cream and melted butter.
  • Pour this mixture over bacon and cheese and bake in 350° oven until custard is set and lightly browned, about 40 minutes.
