Ingredients

  • 1 medium to large head red cabbage, sliced thin or shredded
  • 2 apples, peeled in thin slices
  • 1 large onion, cut in half
  • salt and pepper
  • 1/2 c. vinegar
  • 1/2 c. sugar (for less tartness, add more)
  • 2 cloves

Method

  • Soak cabbage in water (to cover) with 1 tablespoon of salt mixed in for 15 to 20 minutes.
  • Rinse and drain well.
  • Put in a large pot with no more water added.
  • Put cloves in onion halves. Add to cabbage.
  • Add all other ingredients.
  • Let boil, then simmer, covered, for one hour.
