Ingredients
- 1 can potato soup
- 2 Tbsp. Thousand Island dressing
- 1/2 c. water
- 3 c. coleslaw mix
- 2 c. cooked corned beef, cut into 2-inch strips
- 2 c. plain croutons
- 1 c. shredded Swiss cheese
- 2 Tbsp. chopped parsley
Method
- In a 10-inch skillet, combine soup, dressing and water.
- Over high heat, bring to boiling.
- Stir in slaw mix, reducing heat to low.
- Cover; simmer for 5 minutes or until cabbage is tender-crisp, stirring twice.
- Stir in beef and cover.
- Cook 2 minutes or until heated, stirring once.
- Combine croutons, cheese and parsley.
- Sprinkle over mixture; heat 2 minutes or until cheese melts.
- Makes 4 servings.
