Ingredients

  • 1 can potato soup
  • 2 Tbsp. Thousand Island dressing
  • 1/2 c. water
  • 3 c. coleslaw mix
  • 2 c. cooked corned beef, cut into 2-inch strips
  • 2 c. plain croutons
  • 1 c. shredded Swiss cheese
  • 2 Tbsp. chopped parsley

Method

  • In a 10-inch skillet, combine soup, dressing and water.
  • Over high heat, bring to boiling.
  • Stir in slaw mix, reducing heat to low.
  • Cover; simmer for 5 minutes or until cabbage is tender-crisp, stirring twice.
  • Stir in beef and cover.
  • Cook 2 minutes or until heated, stirring once.
  • Combine croutons, cheese and parsley.
  • Sprinkle over mixture; heat 2 minutes or until cheese melts.
  • Makes 4 servings.
