Ingredients

  • 5 lb. roasting duck
  • 1 tsp. salt
  • 1 tsp. pepper
  • 4 tsp. crushed garlic

Method

  • Sprinkle duck with salt, pepper and garlic, inside and out. Tie legs together.
  • Prick skin all other with fork.
  • Put duck side up in shallow roasting pan (do not add water), basting with juice from duck.
  • Cook duck for 1 1/2 hours or until tender in a 350° oven.
  • Strain juices; save 1/4 cup.
  • Cook white ice and mix with 1/4 cup juice.
  • Cut up duck and arrange on heated platter with rice.
