Ingredients
- 5 lb. roasting duck
- 1 tsp. salt
- 1 tsp. pepper
- 4 tsp. crushed garlic
Method
- Sprinkle duck with salt, pepper and garlic, inside and out. Tie legs together.
- Prick skin all other with fork.
- Put duck side up in shallow roasting pan (do not add water), basting with juice from duck.
- Cook duck for 1 1/2 hours or until tender in a 350° oven.
- Strain juices; save 1/4 cup.
- Cook white ice and mix with 1/4 cup juice.
- Cut up duck and arrange on heated platter with rice.
