Ingredients
- 1 tbsp of soft goat's cheese
- bread
- vegemite
- 1 cucumber
- 1 avocado
- rocket leaves
- tabasco
- salt and pepper
Method
It is his favourite summer sandwich. Smear 1 tbsp of soft goat's cheese on a slice of your favourite bread and Vegemite on another. Lay thin slices of cucumber over the goat's cheese, then avocado slices, followed by plenty of tender rocket leaves. Season with salt and pepper, and a couple of dashes of Tabasco. Cover with the remaining, Vegemite-smeared, slice.
To serve
Press the top down gently and slice the sandwich in half with great care.
