Ingredients

  • 2 or 3 lb. chicken
  • 1 onion, chopped
  • 1/2 c. olive oil
  • 1 lb. can tomatoes
  • salt to taste
  • 1 can Ro-Tel tomatoes and green chilies
  • 1 can mushroom soup
  • dash of celery seed
  • pinch of oregano

Method

  • Stew
  • chicken until
  • tender. Debone chicken.
  • Saute onion in olive
  • oil.
  • Add
  • tomatoes, Ro-Tel tomatoes and green chilies, mushroom soup, celery seed, oregano and salt.
  • Simmer about 30 minutes.
  • Add
  • chicken and cook a few minutes longer. Serve over cooked
  • yellow
  • rice.
  • Cook the rice in the chicken broth.
