Ingredients
- 2 or 3 lb. chicken
- 1 onion, chopped
- 1/2 c. olive oil
- 1 lb. can tomatoes
- salt to taste
- 1 can Ro-Tel tomatoes and green chilies
- 1 can mushroom soup
- dash of celery seed
- pinch of oregano
Method
- Stew
- chicken until
- tender. Debone chicken.
- Saute onion in olive
- oil.
- Add
- tomatoes, Ro-Tel tomatoes and green chilies, mushroom soup, celery seed, oregano and salt.
- Simmer about 30 minutes.
- Add
- chicken and cook a few minutes longer. Serve over cooked
- yellow
- rice.
- Cook the rice in the chicken broth.
