Ingredients

  • 2 cups tortellini
  • 1 tablespoon olive oil
  • 2 garlic sausages Italian/, sliced on a bias
  • 1 clove garlic minced or crushed
  • 2 green onions sliced in 1' pieces
  • 1/4 cup feta crumbled
  • 3 leaves basil ribboned
  • 1/2 lemon juiced
  • salt

Method

  • Boil tortellini in salted water until floating on the surface and cooked through the middle, about 5-6 minutes.
  • Add olive oil to a saucepan on medium heat.
  • Add sliced sausages to the olive oil and cook until both sides are browned.
  • Add garlic and green onion to the pan with the sausages and cook until green onion is slightly wilted, about 1-2 minutes.
  • Add cooked tortellini to the pan and toss until pasta is coated and ingredients are well-distributed.
  • Plate and garnish with feta and fresh basil. Season with salt and pepper, and freshly squeezed lemon juice.
