Ingredients
- 2 cups tortellini
- 1 tablespoon olive oil
- 2 garlic sausages Italian/, sliced on a bias
- 1 clove garlic minced or crushed
- 2 green onions sliced in 1' pieces
- 1/4 cup feta crumbled
- 3 leaves basil ribboned
- 1/2 lemon juiced
- salt
Method
- Boil tortellini in salted water until floating on the surface and cooked through the middle, about 5-6 minutes.
- Add olive oil to a saucepan on medium heat.
- Add sliced sausages to the olive oil and cook until both sides are browned.
- Add garlic and green onion to the pan with the sausages and cook until green onion is slightly wilted, about 1-2 minutes.
- Add cooked tortellini to the pan and toss until pasta is coated and ingredients are well-distributed.
- Plate and garnish with feta and fresh basil. Season with salt and pepper, and freshly squeezed lemon juice.
