Ingredients

  • 2 pounds yellow squash, cleaned and sliced
  • 1 large onion, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup bacon drippings

Method

  • Combine squash and onion in a medium saucepan with boiling salted water to cover. Cook 10 minutes or until squash is tender; drain well.
  • Mash squash and onion; drain once again. Add salt and pepper; stir well.
  • Heat bacon drippings in a large skillet. Add mashed squash mixture. Cook over medium heat, stirring occasionally, 20 minutes or until mixture is browned.
