Ingredients

  • 1 (10 3/4 ounce.) can condensed cream of chicken soup
  • 3/4 c.lowfat milk
  • 4 med. potatoes, cut into 1/8 inch slices (4 c.)
  • 1 c. shredded Cheddar cheese (4 ounce.)
  • 1 sm. onion, minced (about 1/4 c.)
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Method

  • Empty soup into 2 qt casserole.
  • Stir in lowfat milk gradually.
  • Stir in remaining ingredients.
  • Cover tightly and microwave on High 20 min, stirring every 10 min, till potatoes are tender.
  • Let stand covered 5 min.
  • 235 calories per serving.
  • 6 servings.
