Ingredients

  • 1 lb. raw, peeled shrimp
  • 1/3 c. butter
  • 1 clove garlic, crushed
  • 1 Tbsp. parsley, chopped
  • 1 to 2 green onions, sliced thinly
  • salt and pepper
  • 1 lemon

Method

  • Melt butter in bottom of broiler pan.
  • Add shrimp, garlic and green onion.
  • Broil 5 to 10 minutes, turning shrimp often until they are pink and curled.
  • Remove from broiler.
  • Mix in parsley and squeeze fresh lemon over all.
  • Serve with rice.
  • (If you use one of the boxed rice mixes, the whole shebang only takes about 20 minutes.)
  • Scallops can also be used instead of, or in addition to, the shrimp.
