Ingredients
- 1 lb. raw, peeled shrimp
- 1/3 c. butter
- 1 clove garlic, crushed
- 1 Tbsp. parsley, chopped
- 1 to 2 green onions, sliced thinly
- salt and pepper
- 1 lemon
Method
- Melt butter in bottom of broiler pan.
- Add shrimp, garlic and green onion.
- Broil 5 to 10 minutes, turning shrimp often until they are pink and curled.
- Remove from broiler.
- Mix in parsley and squeeze fresh lemon over all.
- Serve with rice.
- (If you use one of the boxed rice mixes, the whole shebang only takes about 20 minutes.)
- Scallops can also be used instead of, or in addition to, the shrimp.
