Ingredients

  • 3 tablespoons tahini
  • 12 lemon, juice
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, finely grated
  • 1 garlic clove, finely minced
  • 2 tablespoons sesame seeds, toasted
  • 2 tablespoons parsley or 2 tablespoons cilantro, finely chopped

Method

  • In a pestle and mortar, pound the tahini, lemon juice, soy, ginger and garlic (or blitz them in a blender).
  • Thin with about 5 tbs of hot water, or as much as is needed to get the mix to the consistency of heavy cream.
  • Now either stir in the sesame seeds and parsley or cilantro and use within a couple of hours, or store for a few days, sealed in a jar in the fridge, and add the sesame and herbs an hour or so before serving.
