Ingredients

  • 2 onions, chopped
  • 2 green onions, chopped
  • 1 bell pepper, chopped
  • 2 stalks (ribs) celery, chopped
  • 1 1/2 sticks margarine
  • 3 Tbsp. flour
  • 1 tsp. parsley
  • 2 lb. shrimp, peeled
  • 1/2 c. jalapeno relish (hot salsa sauce may be substituted)
  • 3/4 lb. Velveeta cheese (plain or jalapeno)
  • 1 c. half and half (I use a pt.)
  • 1 lb. fettucine
  • Parmesan cheese

Method

  • Saute the onions, green onions, bell pepper and celery in margarine until soft. Add flour, parsley and shrimp. Cook 15 minutes. Add relish, cheese and cream. Stir well until cheese is melted in sauce.
  • Mix with cooked fettucine and pour into casserole dish. Top with Parmesan cheese. Bake at 350° for 15 minutes.
  • Can substitute crawfish for shrimp.
