Ingredients

  • 4 medium potatoes
  • 3 Tbsp. butter, melted
  • 3 Tbsp.chopped fresh herbs (such as parsley, chives, thyme or sage)
  • 4 Tbsp. grated Cheddar cheese
  • 1 1/2 Tbsp. Parmesan cheese

Method

  • Peel potatoes if the skin is tough.
  • Scrub and wash.
  • Cut potatoes into the skin in thin slices but not all the way through. Put potatoes in a baking dish.
  • Sprinkle with salt and drizzle with butter.
  • Sprinkle with herbs.
  • Bake at 450° for 50 minutes. Remove from oven.
  • Sprinkle with cheeses.
  • Bake for another 10 to 15 minutes, until lightly browned.
