Ingredients
- 4 medium potatoes
- 3 Tbsp. butter, melted
- 3 Tbsp.chopped fresh herbs (such as parsley, chives, thyme or sage)
- 4 Tbsp. grated Cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Method
- Peel potatoes if the skin is tough.
- Scrub and wash.
- Cut potatoes into the skin in thin slices but not all the way through. Put potatoes in a baking dish.
- Sprinkle with salt and drizzle with butter.
- Sprinkle with herbs.
- Bake at 450° for 50 minutes. Remove from oven.
- Sprinkle with cheeses.
- Bake for another 10 to 15 minutes, until lightly browned.
