Ingredients

  • 1 1/2 lb. bacon
  • 1 1/2 c. bacon fat
  • 3 c. onions, chopped
  • 7 1/2 lb. green beans
  • 1/2 c. wine vinegar
  • 1 1/2 Tbsp. pepper
  • 2 c. salted peanuts

Method

  • Slice bacon into 1/2-inch pieces and saute until crisp. Drain, reserving 1 1/2 cups fat.
  • Saute onions in fat until golden.
  • Cook green beans in kettle with onions, vinegar and pepper until beans are desired degree of doneness.
  • Add bacon bits and chopped peanuts.
  • Makes 50 (2 1/2 ounce) servings.
