Ingredients
- 1 1/2 lb. bacon
- 1 1/2 c. bacon fat
- 3 c. onions, chopped
- 7 1/2 lb. green beans
- 1/2 c. wine vinegar
- 1 1/2 Tbsp. pepper
- 2 c. salted peanuts
Method
- Slice bacon into 1/2-inch pieces and saute until crisp. Drain, reserving 1 1/2 cups fat.
- Saute onions in fat until golden.
- Cook green beans in kettle with onions, vinegar and pepper until beans are desired degree of doneness.
- Add bacon bits and chopped peanuts.
- Makes 50 (2 1/2 ounce) servings.
