Ingredients
- 1 c. soybean flour
- 1 c. white or graham flour
- 1 tsp. salt
- 2 tsp. baking powder
- 2 Tbsp. sugar
- 3/4 c. milk
- 1 egg, well beaten
- 1 Tbsp. shortening
Method
- Mix and sift dry ingredients.
- Combine milk, beaten egg and shortening.
- Gradually add to the flour mixture, stirring only enough to moisten.
- Do not beat as batter should not be smooth. Fill greased muffin pans 2/3 full and bake in a 425° oven for about 15 minutes.
- Chopped nuts may be added, if desired.
