Ingredients

  • 1 c. soybean flour
  • 1 c. white or graham flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 Tbsp. sugar
  • 3/4 c. milk
  • 1 egg, well beaten
  • 1 Tbsp. shortening

Method

  • Mix and sift dry ingredients.
  • Combine milk, beaten egg and shortening.
  • Gradually add to the flour mixture, stirring only enough to moisten.
  • Do not beat as batter should not be smooth. Fill greased muffin pans 2/3 full and bake in a 425° oven for about 15 minutes.
  • Chopped nuts may be added, if desired.
