Ingredients

  • 400g spaghetti
  • 1 cup fresh peas
  • 2 tbsp olive oil
  • 1 onion (thinly sliced)
  • 1 clove garlic (finely chopped)
  • 1/2 cup dry white wine
  • 1/2 cup pouring cream
  • 6 large slices smoked salmon (chopped)
  • 4 tbsp flat-leaf parsley (coarsely chopped)
  • salt and cracked black pepper

Method

Cook spaghetti in lightly salted boiling water for 8-10 minutes until al dente. Drain. Cook peas in boiling water for 4 minutes.

Drain. Heat olive oil in a frying pan, add onion and garlic and cook over low heat for 5 minutes or until onion is soft.

Add wine and cream and cook for 1-2 minutes. Add peas and heat through. Toss pasta together with cream mixture and large slices smoked salmon.

To serve

Top pasta with parsley,salt and cracked black pepper.
