Ingredients
- 1 Tbsp. oil
- 1 c. long grain rice
- 1/8 c. onion slices
- 1 garlic clove, minced
- 1/2 tsp. ground cumin
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 c. tomato sauce
- 2 1/2 c. water
- 1/4 c. diced carrots, peas or green peppers (optional)
Method
- Cook rice, oil, onion and garlic over medium heat in large skillet until rice is browned.
- Add remaining spices, tomato sauce, water and vegetables.
- Cook over medium heat 10 to 15 minutes until water is absorbed.
- Reduce to low and cover last 5 minutes for fluffy rice.
- Makes 6 to 8 servings.
