Ingredients

  • 1 Tbsp. oil
  • 1 c. long grain rice
  • 1/8 c. onion slices
  • 1 garlic clove, minced
  • 1/2 tsp. ground cumin
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. tomato sauce
  • 2 1/2 c. water
  • 1/4 c. diced carrots, peas or green peppers (optional)

Method

  • Cook rice, oil, onion and garlic over medium heat in large skillet until rice is browned.
  • Add remaining spices, tomato sauce, water and vegetables.
  • Cook over medium heat 10 to 15 minutes until water is absorbed.
  • Reduce to low and cover last 5 minutes for fluffy rice.
  • Makes 6 to 8 servings.
