Ingredients

  • 1 teaspoon virgin olive oil
  • 1 chicken leg (8- 10 ounces), skinned
  • Dash of salt
  • 1/8 teaspoon chili powder
  • 1/8 teaspoon ground cumin
  • Dash of dried thyme leaves
  • Dash of cayenne pepper
  • 1/2 teaspoon all-purpose flour
  • 1 strip lemon zest
  • 1 strip orange zest
  • 1 teaspoon fresh ginger
  • 1 small garlic clove, peeled
  • 1/4 cup sweet apple cider

Method

  • Heat the oil in a large saucepan until it is hot but not smoking.
  • Add the chicken leg and brown it over moderate heat, turning occasionally, 10 to 12 minutes.
  • Add the remaining ingredients and bring to a boil.
  • reduce the heat to low, cover and cook gently for 15 minutes.
  • Serve with the natural cooking juices.
