Ingredients

  • 1 tablespoon oil
  • 500 g (1 lb 2 oz) minced (ground) pork
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 2 1/2 tablespoons lime juice
  • 1 tablespoon soft brown sugar
  • 10 spring onions (scallions), finely chopped
  • 3 lemongrass stems, white part only, finely chopped
  • 2 red chillies, seeded and sliced
  • 2 tablespoons each of chopped coriander, mint and parsley
  • lettuce leaves, for serving

Method

1. Heat the oil in a frying pan. Add the minced pork and cook over medium-high heat for 10 minutes, or until well browned, breaking up any lumps with a fork as it cooks. Remove from the pan and leave to cool.

2. Combine the sauces, lime juice and brown sugar in a bowl. Add the pork. Mix in the spring onion, lemongrass, chilli and fresh herbs.

3. Cover and refrigerate for at least 3 hours, stirring occasionally, or overnight. To serve, lay a lettuce leaf on each plate and spoon in some of the pork mixture.
