Ingredients
- 2 eggs, beaten
- 1 small onion, diced
- 1/4 c. frozen chopped spinach
- 2 oz. extra sharp Cheddar cheese, grated
- salt
- pepper
Method
- Pour beaten eggs in a hot pan sprayed with nonfat spray. Sprinkle with salt and pepper.
- Cook until dry around outer edge. Cover with onion, spinach and cheese. Fold omelet and cook an additional 2 minutes or until egg is done and cheese melted.
