- 2 lb. fresh spinach, stemmed, well washed and dried
- 1/2 lb. mushrooms, thinly sliced
- 1/2 lb. bacon, cooked and crumbled
- 3 hard-cooked eggs, sliced
- 1/2 lb. cherry tomatoes, halved if large
- 1 1/2 Tbsp. white wine vinegar
- 1 tsp. Dijon mustard
- 1/8 tsp. salt
- 1/8 tsp. freshly ground pepper
- 1/4 c. light olive oil
Method
- In a salad bowl, combine spinach, mushrooms, bacon, eggs and tomatoes.
- In a small bowl, combine vinegar, mustard, salt and pepper.
- Whisk in olive oil until well blended.
- Pour dressing over salad and toss to coat.
