Ingredients

  • 2 lb. fresh spinach, stemmed, well washed and dried
  • 1/2 lb. mushrooms, thinly sliced
  • 1/2 lb. bacon, cooked and crumbled
  • 3 hard-cooked eggs, sliced
  • 1/2 lb. cherry tomatoes, halved if large
  • 1 1/2 Tbsp. white wine vinegar
  • 1 tsp. Dijon mustard
  • 1/8 tsp. salt
  • 1/8 tsp. freshly ground pepper
  • 1/4 c. light olive oil

Method

  • In a salad bowl, combine spinach, mushrooms, bacon, eggs and tomatoes.
  • In a small bowl, combine vinegar, mustard, salt and pepper.
  • Whisk in olive oil until well blended.
  • Pour dressing over salad and toss to coat.
