Ingredients

  • Pea Hummus
  • 2 cups cooked sweet peas
  • 1 tablespoon tahini
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • juice half of one lemon
  • 1 pinch sea salt
  • 1 handful cilantro and/or mint
  • Spring Toast
  • 2-3 tablespoons pea hummus, recipe above
  • 1 piece hearty gluten-free toast
  • 1/2 avocado, sliced
  • 1/4 cup sprouts of choice
  • 1 pinch sea salt
  • 1 dash good quality olive oil

Method

  • Place all ingredients in food processor. Blend until smooth.
  • Taste for seasoning and adjust as necessary.
  • Place in sealed container. Store covered in refrigerator for 2-3 days.
  • Toast bread.
  • Smear pea hummus over toast, then place sliced avocado on top.
  • Sprinkle with sprouts and sea salt. Drizzle with olive oil and eat immediately.
