Ingredients
- 5 medium yellow squash
- 1 egg, beaten
- 1/2 c. buttermilk
- 1 medium onion, chopped fine
- 3/4 c. corn meal
- 1/4 c. all-purpose flour
Method
- Trim ends off squash.
- Slice and cover with water; cook until tender.
- Drain squash, mash and drain again.
- Combine squash and remaining ingredients.
- Drop mixture by scant tablespoon into hot oil, fry 5 minutes.
- Drain and serve hot.
