Ingredients

  • 16 ounces, weight Ground Beef (I Used 96/4)
  • 1/4 teaspoons Ground Pepper
  • 2 whole Canned Chipotle Peppers In Adobo Sauce, Finely Chopped (Use More To Make Hotter)
  • 1 Tablespoon Adobo Sauce From The Chipotle Can
  • 2 slices Bacon, Cooked And Crumbled (plus Extra If Desired, For Topping The Burger)
  • 1/4 cups Cheddar Cheese, Shredded
  • 4 whole Hamburger Rolls (I Used Gluten Free)
  • 1/2 cups Greek Yogurt, Plain
  • 1 Tablespoon Mayonnaise
  • 1 Tablespoon Lime Juice
  • 1/2 teaspoons Ground Cumin
  • 2 whole Canned Chipotle Peppers In Adobo Sauce, Chopped Fine
  • 1 teaspoon Adobo Sauce From The Chipotle Can

Method

  • In a bowl, add ground beef, pepper, chipotle peppers, adobo sauce and bacon.
  • Mix with your hands until combined.
  • Divide into eight 2-ounce size patties.
  • Place about a tablespoon of shredded cheese into the center of four of the patties.
  • Place one of the remaining patties over each cheese topped patty and shape into a hamburger.
  • Place onto a plate and press a thumbprint into the center of each patty.
  • Place in the refrigerator.
  • Meanwhile, heat the grill over medium heat.
  • While grill is heating up, make your chipotle aioli sauce.
  • In a bowl, add the Greek yogurt, mayonnaise, lime juice, cumin, chipotle peppers and adobo sauce.
  • Mix until well combined.
  • Taste it.
  • If its too hot, add more Greek yogurt.
  • If its not hot enough add more chipotle pepper.
  • The heat depends on your liking.
  • Place in the refrigerator until ready to serve.
  • Cook the burgers.
  • Place burgers on the grill and cook each side for about 5 minutes for a medium cooked burger.
  • Remove from the grill to a clean plate.
  • Place the burger onto a hamburger bun and top with chipotle aioli sauce and add additional bacon if desired.
